-4 cups milk or low-fat buttermilk or a combination
-lemon juice or white vinegar [about 3 tablespoons]
-cheesecloth
1] Pour milk into a pot and heat, stirring frequently to prevent scorching.
2] Simmer for a minute or so.
3] While it's still simmering, slowly stir in enough lemon juice or vinegar to make the milk or buttermilk separate into curds [solid white bits] and whey [yellowish liquid]. If using buttermilk, it may take almost no lemon juice or vinegar. The curds may be quite small. That's okay.
4] Line a sieve or colander with cheesecloth and set it over a pot or similar.
5] Pour the curds and whey through.
6] Wrap the cheesecloth around the curds and press to remove excess whey.
7] Refrigerate until you're ready to use the cheese. Then unwrap and enjoy.
8] You can drink the whey or use it in baking or cooking.
Recipe can be doubled, tripled, or whatever.
